Not only is it eay to make but you can customize it to your tastes or for the reciepient. Not a fan of cinnoman? Leave it out or add a different spice. Want to add some rolled rye or barley, go crazy! Once you've made this recipe, you will start to play with it more and more. We'd love to hear about your combinations so don't be shy, be adventurous!
The granola is lightly crunchy on its own but you could add a variety of nuts, dried coconut flakes, or even chocolate (after it has cooled). And depending on the additions it can be eaten with just milk, on yogurt or even on ice cream. Bottom line? We love it this recipe for it's versatility and its simplicity. Enjoy!
4 cups rolled oats
2 Tbsp cinnamon
3/4 teaspoon salt
1/4 cup dark brown sugar
1/4 cup maple syrup
1/4 cup coconut oil
1 1/2 cup total of raisins, dried cherries, and dried apricots
1/4 cup chopped crystallized ginger
Heat the oven to 250 degrees.
Mix the oats, cinnamon, and salt in a large bowl. In a smaller bowl mix brown sugar, maple, and coconut oil. Combine the two bowls and mix until the oatmeal is well coated. Place in one or two sheet pans and cook for 1 hour, stirring every 10-15 minutes.
Add the dried fruit in the last 10 minutes of cooking.
Cool and package in air tight containers.
